  • 2 tins red kidney beans
  • 1 onion, finely chopped
  • 1 tbsp olive oil
  • 1 garlic clove, finely chopped 
  • 1 green pepper, finely chopped 
  • 1 medium carrot, grated
  • 1 egg
  • 4 crackers, crumbled into breadcrumbs 
  • 1 tbsp tomato puree 
  • Pre-heat the oven to 200⁰C/400⁰F/Gas 6.
  • Drain the beans and mash with a fork in a bowl. 
  • Sauté the onion in oil for 3 minutes. Add the garlic, green pepper and carrot and cook for 5 more minutes. 
  • Combine beans, vegetables, tomato puree, egg and crackers together and shape in to 8 small burgers then bake in oven for 25 minutes until golden. 
     

TIPS AND TWEAKS

Go light and serve with a side salad and a big dollop of natural yoghurt.
